Mini Cheesy Crab Cakes: A Bite-Sized Crowd-Pleaser

Crab season is back in our neck of the woods, and that means one thing: it's time to get cracking! There’s no better way to celebrate the return of fresh Dungeness crab in Humboldt and Del Norte counties than with these Mini Cheesy Crab Cakes. Crafted by Claire Awad, AKA @mountainmamacooking, this recipe pairs tender crab meat with golden, melty Rumiano Organic Mozzarella for a flavor-packed bite that's crisp on the outside and irresistibly oozy on the inside.

Perfect as an appetizer, snack, or party favorite, these crab cakes are easy to make and even easier to enjoy. Top them off with a sprinkle of Rumiano Dry Jack for that extra touch of cheesy magic, and you’ve got a dish that’s as fun as it is delicious.

 

Mini Cheesy Crab Cakes Recipe

Ingredients:

  • 8 oz. fresh or canned cooked crab meat
  • 1 egg
  • 2 chopped green onions
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon coconut aminos or soy sauce
  • 1/2 teaspoon hot sauce
  • 1/3 cup breadcrumbs
  • 1/4 cup shredded Rumiano Mozzarella Cheese
  • 1/4 cup avocado or olive oil (for frying)
  • Rumiano Dry Jack (for topping)

Instructions:

  1. In a large bowl, combine crab meat, egg, green onions, mayonnaise, Dijon mustard, coconut aminos (or soy sauce), hot sauce, breadcrumbs, and shredded mozzarella cheese. Mix well.
  2. Heat avocado or olive oil in a large skillet over medium-high heat.
  3. Using a cookie scoop, portion out mini crab cakes and place them into the heated oil.
  4. Cook for 3-4 minutes on one side until golden brown. Gently press down to flatten slightly.
  5. Flip and cook for another 3-4 minutes on the other side.
  6. Remove from the skillet and place on a plate lined with paper towels or a clean kitchen cloth to absorb excess oil.
  7. Top with finely shredded Rumiano Reserve Dry Jack, and garnish with fresh parsley, lemon wedges, and tartar sauce.
