  • 2 tbsp. olive oil, divided  

  • 1 yellow onion, halved and sliced into half-moons  

  • 2 red or yellow bell peppers, sliced  

  • Kosher salt (to taste)

  • 1 ½ lb. skirt steak, sliced into 2” strips
