Ingredients You’ll Need  

  • 3-4 large flour tortillas  

  • 2 tbsp. olive or avocado oil  

  • ½ yellow onion, finely diced  

  • 1 clove garlic, minced  

  • 1 lb. baby spinach leaves   

  • 1 can artichokes (14 ounces), drained and rinsed  

  • 1 container Rumiano Organic Three Cheese Dip  

  • Hot pepper sauce (optional, for added kick!)  

  • Kosher salt  

 

 

How to Make Three Cheese Spinach and Artichoke Bites  

Step 1: Prep the Spinach & Onions  

Preheat your oven to 350°F 

Heat a large nonstick or cast iron pan over medium-high heat. Add 1 tbsp of olive oil, followed by the diced onion and a generous pinch of kosher salt. Sauté for 5-7 minutes until the onion is soft and caramelized. Transfer to a plate to cool.  

Wipe the pan clean and place it back on high heat. Add the remaining oil, half of the spinach, and a pinch of salt. Using tongs, toss the spinach as it wilts. Cook until softened and liquid has evaporated. Repeat with the second half.  

Note: It may look like an absurd amount of spinach, but trust the process—it'll shrink down to less than a cup!  

Press the cooked spinach with paper towels to remove excess liquid, and set aside to cool.  

Step 2: Create the Filling  

Chop the cooked spinach and artichokes coarsely on a cutting board until the pieces are no larger than peas. (Alternatively, pulse them together in a food processor for a smoother texture.)  

Combine the spinach-artichoke mixture with the caramelized onions, Rumiano Organic Three Cheese Dip, and a few dashes of hot sauce (if you like a kick). Stir until everything is evenly mixed. Adjust seasoning with salt and freshly ground pepper to taste.  

Step 3: Make the Tortilla Cups  

Stack the tortillas, trimming off the rounded edges to make squares. Cut into 2½-inch squares 

Lightly spray a mini muffin tin with olive oil or brush with oil. Press a tortilla square into each cup, ensuring it retains the shape of the muffin mold. Brush the insides with a little oil and sprinkle with salt.  

Bake for 10-12 minutes, or until the tortilla cups are lightly browned and crispy. Remove from the oven and cool slightly before removing from the tin.  

Step 4: Assemble & Serve  

Fill each tortilla cup with a generous spoonful of the spinach-artichoke mixture.  

Serve immediately, or refrigerate the prepared filling for up to 3 days (freeze for up to 1 month) and assemble when needed.
