Cut off tops of onions. Scoop out the flesh, leave about 4 rings intact. Combine cheese, ham, red pepper, jalapeno pepper, salt, and pepper in a mixing bowl. Put 1 Tbsp of butter in each onion. Add cheese mixture to onions and wrap with bacon. Secure with toothpick. Place each stuffed onion in aluminum foil, loosely, then close tight and place on oven proof pan. Bake onions for 25 minutes. Remove from aluminum foil. Continue to bake for 15 minutes or so until bacon begins to crisp up.

Serving in the military and married to a now retired soldier, I got to expand my knowledge on my cooking adventures. My greatest cooking inspiration was my Grandma Logan. She was the best cook I've ever known. I've learned so much from my family, acquaintances’, cooking shows, recipe clubs, etc. Entertaining with family and friends brings me great joy. They are always willing to try “Logan’s” latest creations. I also love to share, swap recipes and enter recipe contests. It’s a pleasure to interact on a daily basis with die-hard, self-taught home cooks and others just like me. Food brings us together. There is no greater joy than breaking bread with family and friends, enjoying good conversation, seeing the smiles on their faces, twinkle in their eyes, hearing the laughter and feeling the love in their hearts all in the name of FOOD!
