  1. Preheat oven to 400 Degrees Fahrenheit. Mix the water & yeast; than blend in the sugar & honey. Let sit for approx. 5 minutes to allow yeast to activate and mixture begins gets foamy. Using a wooden spoon, combine salt and sumac, and add flour a cup at a time making sure not to over blend. When your dough pulls away from sides of bowl and forms a smooth ball, separate into 8 equally shaped balls, cover, and let rise in a warm area for about an hour. It ought to double in size. Using a little extra flour, form the balls into small rounds for your sfeehas. Rub each round with some olive oil; divide the shredded cheese among the rounds, and sprinkle generously with black seed. Bake for about 13-14 minutes, until the crust turns light golden, and cheese is bubbly. Let cool & enjoy! *Makes 8 Sfeehas
