Spicy Pimento Grilled Cheese

Spicy Pimento Grilled Cheese


  • 8 slices Sourdough bread
  • 4 tablespoons butter, room temperature
  • 1 cup Rumiano’s sharp cheddar cheese, grated
  • 1 cup Rumiano’s smoked cheddar
  • 1-4oz jar pimentos, drained, pressed dry
  • 2 tablespoons onion, finely diced
  • ½ teaspoon cayenne
  • ¼ smoked paprika
  • 1/3 cup mayonnaise
  • 2 tomatoes, thinly sliced


Butter bread slices on one side. Combine remaining ingredients except tomato. Place single slice of bread, buttered side down in a large skillet over medium heat. Top bread with pimento spread (about ¼ cup) Place slice of tomato on top and top with final slice of bread, buttered side up. Grill until golden brown and flip sandwich to brown other side. Repeat with remaining sandwiches. Makes 4 sandwiches
