Red and White Grilled Cheese Delight


  • 2 tablespoons oil
  • 1 large red onion, diced
  • 1/2 cup chicken broth
  • 1 cup whole berry cranberry sauce
  • 2 teaspoons crushed garlic
  • 1 teaspoon dried thyme
  • 1 tablespoon brown sugar
  • ½ pound roasted turkey
  • 8 slices whole wheat bread
  • 8 ounces Rumiano Organic Havarti


Saute` onion in oil in skillet over medium high heat until translucent. Mix broth, cranberry sauce, garlic, thyme, and brown sugar in a bowl. Add sauce to skillet. Bring to a boil, then reduce heat to simmer and simmer for 5 minutes or until the liquid is reduced. Butter one side of each slice of bread. Layer some of the cheese, then hot turkey on bread and cover with the sauce. Layer more cheese on top of sauce, then cover with another slice of bread. Grill, buttered side of bread down until bread is browned. Turn sandwich over and grill until cheese is melted and other side of bread is browned. Makes four sandwiches
