Pepper Jam Grilled Double Cheese Sandwich


  • 6-7 Mini Orange Bell Peppers, washed
  • 1/3 cup Water
  • 1/4 cup Granulated Sugar
  • 1/2 teaspoon Lemon Juice
  • 2 tablespoons Unsalted Butter, softened
  • 4 tablespoons Cream Cheese, softened
  • 2 slices American Cheese
  • 2 Sandwich Slims, split horizontally


1. Make pepper jam. Halve peppers, seed, remove the stem and chop. Put peppers into a saucepan with water and sugar. Heat over medium heat, uncover and cook stirring occasionally until the liquid is almost gone. Stir in lemon juice and keep cooking stirring frequently until liquid is gone. Remove the saucepan from the heat and let cool. 2. When the pepper jam has cooled, spread butter on outside of each halved sandwich slim (1/2 tablespoon for each). Put the bottom of sandwich slims, butter-side down, onto a skillet. On each sandwich slim, spread cream cheese (1 tablespoon for each), then spread pepper jam equally and put American cheese. Spread cream cheese (1 tablespoon for each) on cut side of each top of sandwich slim and put, cream cheese side down, to close sandwich. 3. Turn on the heat to medium and cook sandwiches until the bottom side is golden brown. Turn the sandwiches, reduce heat to medium-low and cook until the second side is golden brown and cheese melt.
