Onion Dip Grilled Cheese Sandwich


  • 1/2 Rustic Ciabatta Loaf, 6oz
  • 1 tablespoon Unsalted Butter, cut into half
  • 1/4 cup Minced Sweet Onions
  • 2 oz Cream Cheese
  • 1 tablespoon Grated Parmesan Cheese
  • 3 slices Bacon
  • 4 slices Tomato
  • 1/2 cup Packed Fresh Baby Spinach
  • 2 slices Cheddar Cheese


1. In a skillet, cook bacon without oil until crisp. Drain on paper towels. Then cut each bacon into half. 2. Put minced onion into a microwave safe bowl and microwave on high for 45-50 seconds. 3. Make onion dip. In a bowl, beat cream cheese. Squeeze onion to drain with hands then add to the bowl. Add parmesan cheese to the bowl and mix well. Add salt and black pepper to taste and mix well. 4. Cut the bread horizontally into half. On the bottom of the bread, spread the onion dip, put spinach, tomatoes, bacons and cheddar cheese slices. Put the top of the bread to close sandwich. 5. In a large skillet, melt 1/2 tablespoon of butter over medium heat, place the sandwich, bottom side down, into the skillet and cook until the bottom is golden brown. 6. Take the sandwich out and place on a cutting board or plate. Melt 1/2 tablespoon of butter in the same skillet, return the sandwich, top side down, into the skillet. Cook until golden brown and cheese melts. 7. Take the sandwich out and place on a cutting board. Cut the sandwich into half and serve.
