Milanese, Egg & Cheese Grilled Sandwich with Spicy Citrus Sauce


  • 1 lb. thin chicken cutlets
  • 5 eggs
  • ¼ cup milk
  • 1 cups breadcrumbs
  • ½ cup canola oil
  • 4 slices Rumiano Organic Monterey Cheese
  • 1 grape fruit sliced with rind on
  • 1 cup fresh arugula
  • 4 tbsp. chipotle en adobo sauce
  • 1 lime (juice)
  • 2 tsp. honey
  • Salt and pepper


Salt and pepper the chicken cutlets. Whisk one egg with milk until well combined. Put the breadcrumbs on a flat plate, add salt and pepper and mix well. Place chicken inside the egg wash mixture. Heat a cast iron skillet on medium high and add half of the oil. Cover the chicken with breadcrumbs on both sides and cook in the skillet turning them over once until crisp. Add Rumiano Organic Monterey Jack cheese to each chicken cutler and set on a rack to rest. Place the grapefruit in the skillet and turn when chard. Let it cool and remove the rind. Add salt. Mix chopped abodo chipotle peppers with lime juice, honey salt and pepper to make the sauce. Heat the cemita bread until sesame seeds are toasted. Make four over easy eggs. Assemble the sandwiches by placing the chicken milanese with cheese first, arugula, chard grapefruit, top with over easy egg. Brush the top part of the bread with honey chipotle sauce; add more sauce on top of the egg, sprinkle salt and pepper. Enjoy!
