Maple Ginger Grilled Cheese French Toast Sandwich

Ingredients

  • 4 slices Bacon
  • 2 Large Eggs
  • 2/3 cup Milk
  • 2 teaspoons Ginger Powder
  • 1/2 cup Maple Syrup
  • 2 English Muffins, split horizontally
  • 2 slices Swiss Cheese
  • 2 tablespoons Unsalted Butter, divided

Directions

1. Cook bacon in a skillet over medium heat until crisp. Drain on paper towels and cut each bacon into half crosswise. Reserve bacon fat in the skillet. 2. In a medium-large bowl, beat eggs, add milk, maple syrup and ginger powder. Whisk well. 3. On cut sides of each English muffin, brush the reserved bacon fat. On the bottom of each English muffin, put bacons (4 halved slices for each) and Swiss cheese (1 slice for each). Put the top of the English muffin to close each sandwich. Then put the sandwiches into the egg mixture bowl. Soak the sandwiches for about 30 minutes turning the sandwiches a couple of times. 4. In a medium-large skillet, melt 1 tablespoon butter over medium heat. Put the sandwiches and cook swirling occasionally until the bottom is golden brown. Take the sandwiches out and place on a cutting board. Melt 1 tablespoon butter over medium heat in the same skillet. Return the sandwiches into the skillet, uncooked side down, reduce heat to medium-low heat and cook swirling occasionally until cheese melts and bottom is golden brown.
