2015: Kilbasa potato Mozzarella Bake


  • 1 lb. baby red potatoes, peeled and sliced
  • 1 Tbs. olive oil
  • 1 package (14 ounces) smoked kielbasa, sliced and halved
  • 1 red pepper, diced
  • 1 red pepper, diced
  • 2 cloves of garlic, minced
  • 1/2 teaspoon dried thyme
  • salt and pepper to taste
  • 3/4 cup Rumiano Smoked Mozzarella


Cube the baby red potatoes and microwave until they are tender and set aside. In a large skillet over medium heat, coat the pan with the olive oil and sauté the kielbasa, pepper, onion and garlic. Cook about 5 minutes or until onions are translucent. Add the potatoes to the skillet along with the thyme, salt and pepper. Allow the mixture to bubble, about 10-15 minutes. Turn off the heat and toss in the mozzarella. Serve
