Italian Sausage & Monterey Jack Grilled Cheese

Italian Sausage & Monterey Jack Grilled Cheese


  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 8 oz. cremini mushrooms, sliced
  • 1 package of Italian Sausage flavored seitan crumbles or 12 oz. regular italian sausage
  • Butter
  • 6-8 slices of your favorite bread (I used rye)
  • Rumiano Monterey Jack Cheese (1 brick, sliced)


Heat up some olive oil in a pan. Add in the onions and cook a few minutes. Add in the mushrooms and seitan and cook until cooked through and liquid has evaporated. Sprinkle with salt and pepper. Set aside. In a separate pan, heat up some butter. Butter Slices of bread and make sandwiches, piling cheese then filling then more cheese. Grill in pan until brown on each side and cheese has melted. Serve. Enjoy!
