Holiday2016: Hearty Cheeseburger Chowder


  • 1 lb. ground turkey
  • 1 medium onion chopped
  • 1/2 bell pepper chopped
  • 1 stalk celery chopped
  • 2 garlic cloves-minced
  • 2 tbsp olive oil
  • 1/4 c. ketchup
  • 32 oz. beef stock
  • 2 large russet potatoes--peeled & chunked
  • 2 tbsp flour
  • 1 c. half & half
  • 3 c. shredded sharp cheddar cheese
  • 1 tsp paprika
  • 1 tbsp dried parsley
  • salt & pepper to taste


In a soup pot, brown ground turkey in olive oil over medium-high heat. When browned, add onion, garlic, bell pepper, and celery. Reduce heat and saute for 5 minutes, or until tender. Add ketchup and beef stock. Heat to boiling. Add potatoes, and reduce heat to medium. Cover an cook until potatoes are barely tender. Whisk together flour and half & half. Slowly pour in slurry while stirring. Add paprika and parsley. Continue to stir until it begins to bubble. Stir in cheese until completely incorporated. Add salt & pepper to taste. Enjoy!
