2016 First Place Winner: Grilled Cheese Tropikale

2016 First Place Winner: Grilled Cheese Tropikale


  • 2 slices whole grain bread with nuts and seeds
  • 1 Tbsp olive oil for brushing
  • 1 Tbsp salsa verde
  • 2 slices firm but ripe mango
  • 1 ounce Rumiano Organic Havarti Cheese, sliced
  • 4 cooked peeled medium shrimp
  • 1 ounce Rumiano Organic Pepper Jack Cheese, sliced
  • 1/2 cup torn kale leaves


Heat a skillet or saute pan over medium heat. Brush 1 side of each bread slice with the oil. Place 1 slice bread in the pan, oil side down. Top with the salsa followed by the mango, havarti, shrimp, pepper jack and kale. Cover with the second bread slice, oil side up. Cook on both sides, turning once to melt the cheeses and brown the bread slices.
