Green Chili-Bacon Grilled Cheese

Green Chili-Bacon Grilled Cheese


  • 8 slices Sourdough bread
  • 4 tablespoons butter, room temperature
  • 2 cups Rumiano’s Pepper Jack cheese, shredded
  • ¼ cup roasted green chilies, diced
  • 1 large avocado
  • ½ teaspoon garlic powder
  • 2 tomatoes, finely sliced
  • 8 slices bacon, cooked until crispy


Butter bread on one side. Mash avocado and add green chilies and garlic powder. In a large skillet over medium heat, place bread, buttered side down. Top bread with ½ cup cheese, 2 slices of bacon, ¼ of the avocado spread and 3 or 4 tomato slices. Continue to cook until browned. Turn sandwich and continue to cook until golden brown. Repeat with remaining sandwiches. Makes 4 sandwiches
