Holiday16: Crabby Cheesemas Melts


  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup Rumiano Organic Medium Cheddar, shredded
  • ½ cup Rumiano Jalapeno Pepper Jack, shredded
  • 1 tsp dry mustard
  • 1/2 tsp Worcestershire sauce
  • 1/4 tsp salt
  • 1/2 tsp cayenne pepper
  • 1 lb crab meat, cooked, roughly chopped
  • ¼ cup red bell pepper, chopped
  • 1/4 cup green onions, chopped
  • 2 tbsp mayonnaise 
  • 1/2 tsp hot sauce
  • 1 tsp lemon juice
  • 1/2 tsp black pepper
  • 8 top split buns, toasted
  • parsley, chopped, for topping
  • paprika, for topping
  • prepared french fries, for serving, if desired


Preheat oven broiler. In a saucepan melt the butter over medium heat. Add in the flour and cook mixture for 1 minute, whisking constantly. Add the milk and continue to whisk. Bring the mixture to a boil. Cook 1 more minute. Remove from heat and whisk in the cheeses, mustard, Worcestershire sauce, salt, and cayenne pepper. Keep warm. In a bowl, mix together the crab meat, bell pepper, green onions, mayonnaise, hot sauce, lemon juice and black pepper. Place buns on a baking sheet and fill each with equal amounts of the crab mixture. Pour cheese sauce over each sandwich and place under broiler for 2 minutes. Sprinkle with chopped parsley and paprika. Serve with warm french fries if desired.
