The Ginger Goldmine Grilled Cheese

Ingredients

  • Rumiano Organic Gouda - cut into 8 thin triangles
  • 4 Breadsticks
  • 1/2 lb. thick bacon
  • 2 Bartlett Pears- sliced thin
  • 12 oz. of Ginger Ale or ginger beer
  • 3 tbs. grated ginger
  • 1/4 t. cinnamon
  • 1 tbs. brown sugar
  • 1/2 t. seasoning salt
  • 1/4 t. black pepper
  • 2 tbs. Dijon Mustard
  • 2 tbs. Honey
  • 1 tbs. butter
  • 1 tbs. poppy seeds
  • 2 t. lemon juice
  • Handful of fresh chives

Directions

For the Pear Marinade: In a large bowl, combine 1 tbs. grated ginger root, 2 tsp. lemon juice, 1/4 tsp. cinnamon, and 12 oz. of ginger ale or beer. Place sliced pears into the mixture. Marinate for 30 minutes to an hour. Smoked Pears and Bacon: 1. Prepare a charcoal grill for indirect grilling. Place the hot coals on the windward side of the grill, add soaked smoker chips to the coals. (You will need to do this 2-3 times.) 2. Put on the grill grate. Lay the sliced pears and bacon onto a large piece of foil. 3. Sprinkle the 1 tbs. of grated ginger onto the pears. 4. Coat the chunk of bacon with brown sugar, seasoning salt, and black pepper. Don't worry about separately the bacon into slices- leave as is. 5. Place the cover onto the grill. Make sure the holes on top of the grill lid are completely open. Also, to ensure that the smoke moves over the bacon and pears, make sure that these holes are directly on top of the food. Grill for at least 30 minutes or until bacon is cooked. Honey Dijon Ginger Spread: 1. In a small bowl, combine Dijon mustard, honey, and 1 tbs. of grated ginger. To prepare the Poppy-Seed Buttered Bread Sticks: 1. Combine melted butter and poppy seeds into a small bowl. 2. Cut each bread stick open like a hot dog bun. 3. Coat the bread sticks with the poppy seed butter (inside and out). 4. Place each bread stick onto the grill (inside of the bread stick facing down.) Grill for 2 minutes until lightly browned. 5. Flip the bread sticks (outside of the bread stick facing up.) 6. Arrange the Gouda cheese onto the inside of the bread sticks. 7. Cook until the cheese is melted. Assembly: Add fresh chives, smoked bacon and crispy pears. Top with Honey Dijon Ginger Spread.
