Smoking Smoked Mozzarella Bacon Spinach Sandwich

Ingredients

  • 3 TB Dijon mustard
  • 3 TB brown sugar
  • 3 TB cider vinegar
  • 1 minced garlic clove
  • ½ tsp red pepper flakes
  • 6 C baby spinach,stems trimed
  • 10 thin slices cooked bacon, cut into 1 inch pieces
  • 1/4 C dried cranberries
  • 3 TB chopped red onion
  • 8 slices rustic cranberry bread sliced ½ inch thick (or plain)
  • 4 TB mayonnaise (for a golden crust)
  • 6 OZ RUMIANO SMOKED MOZZARELLA.SLICED into 12 slices

Directions

Preheat griddle on high . Place the mustard, sugar,vinegar , garlic and red pepper flakes in a small bowl and whisk. Place spinach in a microwaveable bowl and cover with mustard vinaigrette. Microwave 2-3 minutes. Add in the bacon cranberries and red onion. Microwave another 2 minutes. Place bread on cutting board and spread 1 side with mayonnaise . Use a slotted spoon and place ¼ warmed spinach mixture on 4 of the slices. Top each with 3 slices of cheese. Top with second slice of bread. Place sandwiches on hot griddle and cook 2-4 minute suntil underside is golden. Flip and cook another 2-3 minutes. Remove and place on individual plates. Serves 4.
