Beer Battered Bacon Waffle Grilled Cheese

Ingredients

  • 2 ¼ Cups All-purpose flour
  • 1 Tsp Salt
  • 4 Tsp Baking Powder
  • 1 1/4 Tsp. Baking Soda
  • 3/4 Cup Milk
  • 5 tbs Rumiano's Salted Butter
  • 1 Cup Pilsner Beer
  • 2 Large Eggs
  • 4 Pieces Applewood Smoked Bacon
  • 2 Cups Rumiano's Organic Gouda
  • 2 Cups Rumiano's Organic Fontina
  • 2 Cups Rumianos Organic Smoked Mozzarella

Directions

In a large bowl, whisk together the flour, salt, baking powder and soda. In a medium bowl, combine melted butter, milk, eggs, and beer. Stir ingredients together until they are just combined: Don’t overbeat. Heat up your waffle iron and lightly butter or spray each side. Fill with batter and then cook until the waffle is golden brown. Heat up a skillet and add a couple tablespoons of Rumiano’s butter. Put one waffle face down into the butter, and then pile on the cheese. Add an additional waffle on top. Grill slowly over medium heat until cheese has fully melted. Enjoy!
