Piryshky, deliciously comforting appetizers, are made frequently in Eastern European cuisine, in various shapes and sizes. Growing up in a Western Ukrainian family, we made many variations of piryshky, changing the filing to fit a specific holiday or occasion. These two-bite appetizers, with the Mediterranean twist, and a little kick, is my variation on a beloved family culinary tradition. They will disappear quickly at any holiday party, or large family gathering. They may be eaten straight from the over, or made in advance, and warmed up in the last minute.

Being that we had to travel last minute, I wasn’t able to try them out at any local eatery -- So I came up with my own recipe! Never getting enough of these is one thing, but eating little Lebanese cheese pies that combine the spice that is said to ‘cure everything but death’ is heaven in a pinch!

I came up with these No Hassle(back) Potatoes because as a whole we don't eat a lot of potatoes in our family. But I knew that we all liked bacon, jalapeno poppers, and cheese. So I thought, why not stuff a potato with those items? These were a hit! Who doesn't like bacon, jalapeno, and cheese? As a mom of three it's nice to bake a few extra potatoes when I already have the oven on for another meal. Keep the potatoes in the refrigerator until ready to use in a few days. Thinking ahead makes meal preparation go by much quicker. This recipe is also very easy. If you have children who are learning knife skills, partially cooked potatoes are easy to slice. Younger children can help stuff the potatoes with cheese and bacon. Just not the jalapenos, their fingers might get spicy!

My daughters enjoy macaroni and cheese, I like to try variations of the dish that the rest of the family will enjoy. I try a variety of cheeses and also I like to try adding different ingredients. We buy our bacon from a locker not too far from where I grew up. The family that runs the locker sells bacon with various seasonings, offering plenty of combinations to choose from.

Baklava and the holidays. Apple pie and cheddar cheese. Perfect combinations. The only thing that would make them better would be to combine them. So I did! I love to bake and around the holidays I like to share with the friends and family. My nieces love baklava and my husband and mother like pies and fruit pastries. I never seemed to have enough time to make both so I decided to combine them. Rumiano’s Extra Sharp Cheddar cheese added just the right flavor to complement the sweet tart apple filling. Another holiday dilemma solved and a new holiday tradition. Thanks Rumiano for making my holiday a little happier!

Growing up, I didn't know what a sweet bread pudding was! My grandmother (and mother) always made a savory one that was always the side dish to every holiday. Instead of traditional dressing, my Mom made this, varying ingredients every year. I've tinkered with it as well, and my own family loves this version with the "melt-y cheese" (as my 5 year old once said). The only thing they ask for every year is "MORE CHEESE, PLEASE!". And that's a good idea!
