Since that week was so fun, we periodically have "Grilled Cheese Challenges" and create new sandwiches. This was one that we collaborated on. He got a sandwich full of cheese & meat, while I got all the veggies that I love.

I live in Arizona and many of the grocery stores roast green chilies in large roasters or grills and sell them in the front of the store. I like to buy a bag and freeze them for dips or sandwiches or anything else that needs a little spicy flavor. Putting them in a grilled cheese sandwich seemed to be a perfect complement to Rumiano’s Jack cheese. I like Pepper Jack but Cheddar would work for anyone who wants a little less kick.

I've never met an apple recipe that I don't like. Once the fall and winter months arrive, you can be sure to find a homemade apple treat ready for the taking. Whether it be homemade apple sauce, apple crisp, of muffins, we love them all. My family's all time favorite apple treat is apple pie. It has been a part of every holiday dessert table for as long as I can remember. I never fuss with or change my recipe. Last year while enjoying Christmas dessert, a guest asked me if I had ever added cheddar cheese to my pie. I believe that I gasped. "No, I would never do that." She began to tell me that many people do. Well, I tucked that idea far away, that is until today. As I was trying to think of a unique use for cheese for my entry, that conversation from last year popped up. So , while I was not willing to change my pie, I was more than willing to experiment with a variation of my pie. You know what? These miniature apple pie cookie cups, topped with a cobbler topping filled with cheddar cheese are deliciously addictive. We liked them so much we agreed that they should be part of this year's Christmas dessert table...right next to the apple pie.
