I like pimento cheese spread but I’d never made my own so I decided to give it a try. I used two of my favorite Rumiano’s cheeses and added some cayenne for a little spicy fun. I grilled it and added tomato. To keep it kid friendly, just skip the cayenne.

The Ginger Goldmine Grilled Cheese

The Ginger Goldmine Grilled Cheese features the smooth Rumiano Organic Gouda, ginger-marinated pears, carmelized-smoked bacon, home-grown chives, topped with a Honey Dijon Ginger Spread on a Poppy Seed-Buttered Bread Stick. This recipe was inspired by my love for cooking outdoors with friends, while using fresh, uniquely-prepared ingredients. To give my friends a campfire experience, the bacon and pears are smoked. Once they break through the toasted outer layer of the pear, their taste buds are elevated from the ginger-infused core. The culinary experience is then balanced with the sweet tang of Honey Dijon. When I watch my friends take each bite, I see their joy and I am satisfied knowing that I accomplished my goal.

Tinga Chicken Grilled Cheese

I have a large family so when we get together we usually have something easy like burgers or tacos. While I love tacos sometimes they can get a little boring so I decided to try a new recipe called Tinga Tacos that uses shredded chicken and a sauce which consists of onion, garlic, tomato, chipotle chilies, oregano and thyme. The chicken absorbs all the flavors and really makes a fun and delicious taco. So what do you do with leftover seasoned taco meat? Well, I decided a grilled cheese sandwich would be perfect with Rumiano’s Chipotle White Cheddar cheese. (I added some tortilla chips for a fun little crunchy texture.)
