This semihard Colby cheese has a flavor similar to cheddar with a sweet and mild flavor and a soft texture. 

With its mild flavor, Colby cheese is best used as a table cheese, in snacks and salads, or on the grill. First made in the late 19th century, Colby cheese was named after the village where it is was originally created – Colby, Wisconsin.
