This firm cheddar cheese has a smooth texture and mild flavor.

Cheddar Cheese is a hard pale yellow to orange smooth textured cheese originally made in the English village of Cheddar, in Somerset.

To color traditionally pale yellow cheese, the cheesemaker adds annatto to the milk. Annatto color is extracted from the seeds of the tropical anchiote tree, and is used to give Cheddar cheese a deep orange color.

Cheddar flavors vary depending on length of aging and its origin. Mild is typically aged for less than 6 months, medium from 6 months to 1 year, sharp 1 year to 2 years, and extra-sharp 2 years on.
