Featured Recipe: Cheesy Scalloped Potatoes

Happy Thanksgiving!  We've been prepping for the big day here at Rumiano Cheese Co. and thought we would share some of what's cooking in our kitchen:  good 'ole scalloped potatoes!  These aren't just any 'ole scalloped potatoes because we decided to make them nice and cheesy by adding some Rumiano Cheese.  YUM!  If you are looking for a last minute dish for Thanksgiving, maybe you will want to give this recipe a try.

"While the cheddar is sharp, it’s on the milder/more mellow side giving it a pretty nice balance for anyone who might not love anything too sharp. Fun fact: the flavor of cheddar can vary depending on how long it has aged. Typically, the longer it ages, the sharper it becomes. Most cheddars are aged 1-2 years (like Rumiano’s)."

We've done it again! This month we came up with a new quesadilla recipe we think you will enjoy. This is an easy and quick meal with veggies. The sweet corn, spicy salsa and cheesy garlic jack are super yummy together. We used Rumiano Garlic Jack Cheese but you are welcome to use any Rumiano Cheese you might have on hand.

American Cheese Society 2016 Winners

We have some winners! This year’s American Cheese Society was a success for some of our classic varieties. ACS is an annual conference bringing together thousands of cheese-industry members from across North America. There were some great surprises this year, as our Organic Smoked Mozzarella won its first award! Everyone's favorite Dry Monterey Jack placed along with the rich Organic Unsalted Butter.

Now, our winnings from the ACS “Cheese in the Heartland” conference in Des Moines, Iowa:

Ever wondered where Monterey Jack got its name?

Monterey Jack is considered a classic California cheese. It is one of our most popular varieties in the Rumiano Family Organic line, and we have been producing it since the company's birth in the early 1900s. Our Dry Jack (aged Monterey Jack) is another crowd favorite. Monterey Jack has penetrated the US cheese market as a "typical" American cheese, but there is quite a history attached to the name.

Smoked Mozzarella

Our Smoked Mozzarella is a favorite for many, and has quite an interesting story. It all began in the late 80s when the Rumiano Cheese purchased the "Landmark Cheese" (our raw cheese line) from RW Knudsen. When we obtained Landmark, it came with  some packaging equipment, inventory and a metal box slightly larger than a refrigerator. Originally, the new equipment was used to smoke the Landmark brand raw cheddar until Jack Gibson (former Rumiano Cheese innovator and team leader) asked, why not smoke mozzarella? Little did they know it would begin to out-sell the smoked raw cheddar and the classic was born.
